
1) Becoming vegetarian is much more fun than I imagined. We are actually eating more variety of foods and having fun trying recipes. In fact, we are NOT eating stuff that tastes like cardboard, just more of the stuff we like. (Photo above is Beaker's Barley Soup, veeerrry good.)
2) I have SO much more energy than before and my body does not ache any more.
3) I feel lighter. I weighed myself today, 136 pounds, and wish I had done it six weeks ago. My jeans are not so tight and Mark said he thinks I've lost weight.
4) Mark and I have both noticed that certain things are more "regular". That's all I have to say about that.
5) Here's the one drawback, I feel hungry more often. I've been waking up in the middle of the night (always did that) feeling hungry. I need to eat more often.
6) I feel happier, probably because my body doesn't hurt and I know I'm doing something good for myself.
7) I'm becoming an activist. While visiting www.goveg.com I signed up for PETA's online newsletter. They sent me an email detailing an elephant polo game sponsored by Cartier. We are asked to write to a specific person at Cartier asking them to withdraw sponsorship of the cruel game. I did that and went so far as to rewrite the prewritten letter in my own words to give it more weight. Then I ordered some leaflet's from PETA's store; their shopping guide which lists companies whose products are and are not tested on animals.
8) I'm waiting on a call back from our health provider to make an appointment with the nutricianist. I want to make sure Divina is getting a proper diet. There are special concerns for vegetarian toddlers.
9) I signed up to bring a vegetarian main dish to our fellowship's Thanksgiving potluck this Sunday. I am trying Vegetarian Tortilla Pie tonight: tortillas layered (like a lasagna) with a mix of salsa, tomato sauce, black beans, corn, cilantro, and Monterey Jack cheese.
10) My heart is swooning because Mark has decided to become vegetarian, too. I love that man.

Seriously, you've just about 90% made a believer out of me! In fact, I am eating vegetable soup right now. (It's Campbells, so it might not be real vegetarian...but it's a start)
I was full vegetarian for about a year after 1987-88 when my oldest was born, when all I had was a hot plate to cook on...still have my "American Whole Foods" cookbook from back then. They talked about how to combine vegetables, grains, and legumes to maximize the protein and amino acids.
I definitely remember the effects on the digestive tract! Which for me was one reason I stopped...turns out I had a bum gallbladder and was having trouble digesting all kinds of things. (But enough about me.)
...Elephant polo, ugh, sounds horrific. Should replace with "Cartier Executives and Board of Directors polo"
Hey, did you make the tortilla pie for the Thanksgiving feast at PUUF? It was awesome! Num num as Hana would say.
I ate no meat at the feast. Not knowingly, anyway.
